One of only three remaining blue cheeses made with unpasteurised cows milk in the world, Bleu de Gex, also known as Bleu du Haut-Jura, is produced exclusively with milk from the Montbéliard cows that graze the mountain pastures of the Jura. Their milk provides a unique taste that typifies the cheese, and which makes it different form all other “Bleus”. The rind, which is covered with a layer of white, powdery mould (that should be wiped off prior to eating) protects a dense and creamy paté, pale ivory in colour and which is marbled with dark green-blue veins. Sharp and slightly bitter to taste with a hint of hazelnut, the cheese’s aroma evokes a sense of the rich pastures from which it comes. In France, Bleu de Gex is enjoyed mixed with boiled potatoes. Alternatively, melt it in a pan and enjoy it on a slice of fresh, crusty bread.
