Made only between November and June, Brin d’Amour, or more correctly Fleur du Maquis, is the most famous of Corsican cheeses and is definitely one for those who like herbs. Rosemary, wild thyme and savory are mixed with juniper berries, coriander seeds and tiny red chillies to form an aromatic coating for this tiny, fresh, ewe’s milk cheese. It’s pâté is bright white, soft and moist, mild and gentle on the palate hinting to honey tones, but primarily taking on the flavour of the herb coating. A sweeter, nutty taste develops with maturity, when the pâté darkens and melts.
