Chaource

This cheese has not been well served by the ravages of history. While Camembert is the symbol of Normandy and Comté is that of the Jura, Chaource is struggling to attain the rank of a “world cheese”. Not that this cheese is one of inferior quality – far from it – the reason is simply that area of production straddles two regions, and two major wine producing regions at that, Champagne and Burgundy. Chaource is a young cheese when eaten, and melts in the mouth like snow. Dense and crumbly, it’s light taste develops to something rich and nutty, slightly runny when aged. Pairs very well with Champagne and other dry, sparkling wines.

Champagne and Ile-de-France
Geographically, this is quite a small region, however in cheese terms it is of real significance, being home to the authentic fermier Bries. Ile-de-France has become industrialised and is now home to many workers who commute into Paris for work. There is little space for grazing cows, what little agricultural land there is has usually fallen prey to corn or sugar beet. Hence very little “true” Brie is made here anymore, most is factory made in Lorraine.
