It is no surprise that Coulommiers resembles both Brie and Camembert. Its origins can be traced to the Brie area, east of Paris and home to the present day Brie de Meaux, but being smaller in diameter and thicker, is more easily transported to market. Coulommiers uses pasteurised milk and therefore its flavour is somewhat less full than that of Camembert Fermier although careful ripening produces a cheese of good earthy flavour. A velvety white crust housing a mellow rich cheese with a fresh, light nutty texture and flavour.

Champagne and Ile-de-France Geographically, this is quite a small region, however in cheese terms it is of real significance, being home to the authentic fermier Bries. Ile-de-France has become industrialised and is now home to many workers who commute into Paris for work. There is little space for grazing cows, what little agricultural land there is has usually fallen prey to corn or sugar beet. Hence very little “true” Brie is made here anymore, most is factory made in Lorraine.
