Livarot is very much an exhibitionist. This soft cheese, with a golden, washed (in brine) rind and bound with five strips of raffia, is often called the “Colonel”. Its full flavoured, supple and elastic pâte exudes a pungent aroma of spices. Made within a 12 mile radius of the small town of Livarot, in the wooded hills of the Pays d’Auge, the curds are cut and kneaded prior to being hand-ladled into the mould, giving rise to pinholes scattered throughout the cheese. Any wine will have to work hard to maintain a presence with Livarot, best to taste it with a matured Calvados.

Normandy and Brittany Normandy is characterised by lush, rich, low-level farmland where cows and sheep graze freely right up to the coast where the cliffs overlook the English Channel. The soil here is salty, referred to locally as prés-salé meaning salty fields and it is no surprise that the regions cheese inherits some of this salty tang. Inland the land becomes ever more fertile and the landscape is dotted with small villages that provide a base for the local agricultural industry.
