This attractive small, log-shaped goats cheese is made in both the Poitou and Torraine areas of surrounding the Loire river. Sainte-Maure is characterised by a length or straw that runs through the centre of the log, provided to ease handling of this delicate cheese. The rind is white and downy which grows a blue mould and hardens as the cheese ages. The pāte is firm, snow white with a close texture and has a rich flavour that is not too salty. This cheese works equally well alongside others on a cheeseboard, or is delightful served on its own with fresh, in-season tomatoes and good quality, crusty bread.
