The fresh delicate alabaster appearance of this cheese almost looks translucent. The milk from white water Buffalo has a mossy damp aroma and tastes light and savoury with sweet hints. The area around Salerno is very marshy which is eminently suitable for these animals, and the taste of pure Buffalo milk Mozzarella is quite unlike any other cheese bearing the name Mozzarella. We have sourced hand made cheeses from a small dairy near Sorrento using milk from their own herd.

The South South of Rome, Italy’s climate and geography start to become more uniform. The soil here is infertile, and the climate harsh, very different from the rich alluvial soils associated the north which are nowhere to be seen. The only animals that can exist on this unwelcoming terrain are goats and sheep. Goat’s milk cheeses are made but destined for local consumption only, however the ewe’s milk cheeses from the south are more widely appreciated.
