Ever since the eleventh century Taleggio has been made by families living near the small town of Taleggio in Lombardy. The cheese uses milk produced by the cows after they have come back down from their summer Alpine pastures in the autumn and winter. Square in shape, Taleggio has a washed rind, pinkish-orange in colour and slightly sticky to touch that has fruity aromas of raisins and lemon. The equally fruity, full bodied pāte melts in the mouth and benefits from a very long, luxurious finish. This is a cheese of great character which partners dry whites well. It is wonderful when melted and served with layers potatoes and pancetta or indeed when served simply with gnocchi.
