An unpasteurised farmhouse made cheese from a small hillside farm not far from the coast. The smooth outside crust is rubbed in olive oil and matured for between 6months to one year. The taste is nutty and earthy with a hint of animal sweetness. Very rustic style.

Tuscany, Umbria and the Marches Anywhere else, if a region were to have Emilia-Romagna as a neighbour, it would shy away at the first suggestion of making cheese. Not so in Tuscany, Umbria and The Marches. Here farmers are spurred on, not to emulate Parmigiano-Reggiano, but instead to create their own cheese that reflects their passion and the natural raw materials available to them.
