Gorgonzola Dolce Cremeficato

The famous Italian blue cheese, made primarily around the town of Novara in the Po valley that lies in the shadow of the Alps, was historically made when herds rested on the long journey down from their mountain-top summer pastures. Their milk at that time of year was particularly rich and luscious in character. Officially, the cheese can be made with either cow’s, goat’s milk a choice that is made in the dairy depending on the time of year – the nature of the cheese makes flexibility possible in this respect. Gorgonzola Cremificato is the most creamy and subtle variety of the cheese that is made. It has a pâte that melts easily in the mouth and the blue veins gently bleed into the curd, inducing a sweet nutty taste.

Piemonte
Spreading out across the north west corner of Italy, Piemonte is serious about its cheese, and with good reason for the region boasts no fewer than eight DOP products. Every corner of the region, from the mountain pastures to the valley floors, has its own goat’s, ewe’s or cow’s milk speciality. People here are self reliant, and prefer their food to be “home grown”. Thus one finds cities like Turin and Bra awash with local produce, meat, fruit, vegetables, wine and, of course, cheese.
