Farmhouse Manchego
Farmhouse Manchego

Manchego originally discovered fame, because its hard, thick rind and firm pâte made it easy to transport. Thus, people living across a wide area would come to recognise its name. The cheese even has a mention in Cervantes’ Don Quixote. Made only from ewe’s milk, and usually shaped in the form of a small, compact wheel formed in a woven basket it is sometimes matured in olive oil for up to two years, after which time the rind becomes bronze and then black in colour. This cheese, however if just rubbed with olive oil before being matured traditionally in cool cellars. Made with unpasteurised milk and aged around 9 months, it develops a hard, crumbly texture and is nutty with hints of dried fruits to taste.

Spain
Spain is probably Europe’s little secret as far as cheese is concerned. Surprisingly the Spanish steward a wonderful range of nearly 60 very good quality, characterful cheeses. The problem is, and one might instead argue this is due to their good sense, that farmers are often reluctant to sell these cheeses outside of their local area.
