Mary Burns Ardrahan Cheese was first produced in 1983 by Mary Burns, and her late husband Eugine, at their family farm in the lush countryside of Duhallow in north west county Cork. However the foundations for the cheese's success were laid much earlier by Eugene’s father who in 1925 established the Ardrahan herd of pedigree Friesians imported from the United Kingdom. Since then, all the replacement heifers have been born and bred in Ardrahan from the best pedigree sires, and it is the milk from this herd the milk that is used to make Ardrahan.
