Croghan
Croghan

Luc and Ann Van Campen live in Ballynadrishogue where their herd of goats are allowed to graze freely on pastures studded with flora unique to the Penninsula. This imparts a particular flavour to the milk and ultimately to the cheese. The unpasteurised milk has a vegetarian rennet and morning and evening milk is used in cheesemaking. The crust is rubbed giving a smooth natural look to the pale grey and light blush outside moulds. The taste is nutty and rich with hints of herbs and sea spray (the firm is not far from the coast) and the texture is smooth with tiny scattered eyelets. Very like some alpine goat's cheese in style.
