Doddington

Originally Maggie Maxwell wanted to make a farmhouse Red Leicester, but over time as she worked to improve the flavour of her cheese, Maggie found herself making something more akin to a Dutch cheese. Having an attractive maroon coloured rind resulting from it being rubbed with a beetroot solution, the cheese is dense and crumbly in texture offering a gentle and pleasing aroma. The taste is fresh and salty at first, mellowing into a rich fruitiness in its length. This farm is quite close to the see which probably accounts for the briny tang to the flavour.

Doddington Dairy
Neill and Maggie Maxwell have been farming at North Doddington for more than 50 years after moving from the West of Scotland. Situated in the beautiful Glendale Valley, overlooked by the Cheviot Hills, North Doddington is a traditional Northumbrian mixed farm. In the cool, clean air of the valley the dairy cows are able to happily graze and produce the fresh whole milk for the cheeses made on site at the dairy.
