Gorwydd Caerphilly

Regions that have a strong Celtic influence – Brittany, Ireland, Scotland and Wales – have no real cheesemaking legacy; milk in these regions is primarily consumed fresh, as butter or milk. However, these regions do produce a few cheeses, and Caerphilly is probably the most famous of those made in Wales. Its origins can be traced back to 1830 but as demand grew, local production could not keep pace encouraging farmers across the Bristol Channel in Somerset to start production of the cheese. Most industrial Caerphilly is now made in England but the Trethowans make this traditional cheese in Llandewi Brefi. Made with raw milk, Gorwydd Caerphilly has natural grey rind feeling soft and velvety to the touch. The creamy pâte has a crumbly texture which presents a fresh, fruity acidity on the palate.

Gorwydd Farm
Todd Trethowen does not come from a cheesemaking family but learnt to make the cheese from Chris Duckett, whose family (like the Montgomerys and Keens) had made it for three generations - not in Wales but at Wedmore, a few miles from the coast on the south side of the Bristol Channel. Gorwydd Farm faces west across the lush Teifi valley in South Wales; the milk comes from four local farms and every stage of the cheesemaking is carried out by hand.
