Gubbeen is a washed rind cheese made by Tom and Giana Ferguson near Schull in County Cork. Using pasteurised milk from the farm, the cheese is matured for between 8 and 16 weeks. When it’s freshly made, the cheeses are dipped in a salty bath which helps to encourage the growth of Bacterium Linens, as does the moist air on the south-westerly coast of Ireland where Gubbeen is made. Occasionally it will give the cheese a stickiness to the touch and a slightly pungent smell.

Tom and Giana Ferguson Gubbeen Farm, in the bay of Schull in West Cork, has been worked by the Ferguson family for five generations, but Tom and Giana’s cheesemaking is the result of a wonderful marriage of two cultures. As a child in Spain, Giana's family had made cheese from goats milk on her father's small farm in the mountains above Alora. Later, living in France, Giana was brought into contact with the great french cheeses. Marrying into a farming family in Ireland where some of the best milk in Europe is produced, Giana and her husband Tom experimented and started to produce their own cottage cheeses and fresh cheeses in the 1970s.
