Innes Button

Innes Button is a tiny, round goats’ cheese: hence the name ‘button’. It sprang to fame when, despite its size, it won the Supreme Championship at the very first British Cheese Awards in 1994. The dairy was then owned by the heir to a country estate who famously played Mozart to the goats on rainy afternoons, claiming that it increased yield by ten per cent. At that time Stella worked as the cheesemaker; subsequently, she bought the business and fairly promptly discontinued the practice: sadly for those with romantic notions, she says that it made no discernable difference either to the yield or the quality of the milk. The crucial factors about her cheese are her extraordinarily light touch and the fact that the milk is used within twenty minutes of leaving the udder: the milk from the second milking is either sold in liquid form or the cheese made twice a day. The result is a sweet, mild, delicate cheese with virtually no hint of the taste of goat and the finest, most mousse-like texture imaginable.

Stella Bennett’s farm near Tamworth in Staffordshire is a small, family run affair, making cheese using only the freshly drawn milk from her herd of 350 goats. The dairy was originally owned by the heir to a country estate who famously played Mozart to the goats on rainy afternoons, claiming that it increased yield by ten per cent. At that time Stella worked as the cheesemaker but, after subsequently buying the business, she promptly discontinued the practice – thankfully seeing no reduction in yield!
