Montgomery's Cheddar
Montgomery's Cheddar

Mongomery’s is probably the best known traditional farmhouse Cheddar - and as such, the most famous raw-milk Cheddar in the world. It also has the gentlest flavour, with a sweet, clean, powerful rather than strong tang and a spectrum of sub-flavours which unfold gradually in the mouth. To start with, the cheese seems sweet and flowery, but as you taste a rich, peppery spiciness develops as a prelude to the tang. Its flavours vary a little according to when the cheese was made, but the quality is surprisingly consistent. To enjoy the flavours of Montgomery’s to the full, serve it alone with sourdough bread and English apples, or with a full-bodied claret.

Jamie Montgomery
Jamie Montgomery, 43, whose family has been making cheese at Manor Farm in North Cadbury since 1911, uses only the milk produced by his own herd of 140 Friesian cows to make his unpasteurised Farmhouse Cheddar, which is one of the very few that still uses calf rennet, the traditional source of the enzyme, to start the curd. This is possibly the only Farmhouse Cheddar still using an old, slow peg mill to cut the curd, equipment that results in the peculiar fissuring and brittleness of the cheese.
