Stinking Bishop
Stinking Bishop

In making Stinking Bishop, Charles uses his own milk, obtained from the herd of Gloucesters, raw but pasteurizes the Fresian milk that he buys in. However, such is his skill as a cheesemaker that without being told, very few people would know. The name Stinking Bishop comes from a local type of pear used for perry (the pear equivalent of cider) with which the rind of the cheese is washed. . The cheese itself is reminiscent of a French Epoisses or Vacherin being encircled with a strip of shaven wood. It is washed in a perry made from the “Bishop” variety of pear which gives it a pungent rind whilst inside it is quite mild, milky and often very runny indeed.

Charles Martell
Charles Martell is patron of the Gloucester Cattle Society and one of only two people in the UK making cheese from Gloucester milk. When he first moved to his farm in the Forest of Dean in 1972, there were only sixty-eight Gloucester cattle in the world; since then, the total of females has risen to about 700 and his own herd, which he has been patiently building up over the years, now numbers nearly thirty (including bulls).
