Hawe's Wensleydale
Hawe's Wensleydale

Like many cheeses, industrial reproduction has meant that Wensleydale has experienced a chequered history in recent years. A creamery in Hawes together with one or two small farms still make this cheese using traditional methods, those that were first used by the monks at nearby Jervaulx Abbey. Semi-hard with a crumbly texture and made primarily using pasteurised cow's milk, a thin natural dry rind forms beneath the muslin bandage applied during production. Within a moist, creamy pāte is revealed with a hazelnut taste and fresh citreous tang. Wensleydale is perfect for partnering dried fruits or even fruit cake.

Wensleydale
Wensleydale is formed by the valley of the River Ure which is sometimes pronounced Yore and rises in the vicinity of the village of Hawes. The village's name derives from 'Hause' meaning a narrow neck of land. Hawes is located at the end of Buttertubs Pass, a natural pass where limestone features are said to resemble tubs of butter.
