Cheese, Bread and Wine

Cheese, Bread and Wine have been considered perfect partners for as long as people can remember. There can be few greater pleasures in life than eating a good, mature farmhouse cheese, perfectly matched with a glass of good wine and a chunk of freshly baked bread. Indeed, so close is their associations, that cheese, bread and wine are often referred to as the "Holy Trinity" of the table.

Matching cheese with other food and drink is a matter of harmony and contrasts. Whilst combining flavours, colours, textures and smells is entirely a matter of personal preference, adhering to some basic ground rules will help achieve that balanced combination. However, there is now substitute for experimenting with different combinations to find your own personal preference.

Bread
White or brown breads, cooked on a stone slab and hand-crafted leavened breads go well with all types of cheese. The more delicate the cheese, the less salty and flavoured the bread ought to be to go with it. For more prominent cheeses, experiment with spiced breads such as cumin bread with washed rind cheeses, raisin bread with strong, distinctive cheeses and sour dough with Roquefort.

To compliment a cheeseboard, put together a basket of different breads; brown bread, leavened bread, raisin bread, bread with walnuts, etc.

Wine
Compared with a dish incorporating a number of ingredients, cheese is a single product and therefore can be matched to wine with relative ease. Rather than thinking about particular wine names, think about the component properties of the cheese and then think about the properties in a wine that will compliment the cheese.

Many people erroneously think that only red wines should be drunk with cheese. In fact, the tannin in red wines is often a strong rival for the character of cheese and it is white wines that usually make better partners with cheese. Wines produced locally to the cheese often bring the greatest flavour combinations.
