The grapes are hand-picked and traditionally fermented in open vats and then 25% of the wine is matured in oak barrels for 8 months, the rest in tank. After blending the wine is left in old barrels for a year before bottling. Mercurey is strong and powerful when young, showing red berry fruit overlaid with oaky characters. Over time these two combine, the tannins remain strong but smooth – it is at its best after 6 or 7 years.

Domaine du Meix-Foulot Agnès De Launay recently took over the running of the family domaine from her father and is proving to be a worthy incumbent of this role. The winery is set high on the top of a hillside overlooking not only its own vineyards but the whole of the Mercurey area. The vineyards are planted to Chardonnay and Pinot Noir and are managed as naturally as possible. Vinifictation is also as natural and traditional as possible, making wines of character, depth and structure. The red wines are not bottled until two years after harvest and have spent I year in barrel.
