Gigondas La Tour Sarrazine, Domaine Clos de Cazaux 2002
From two of the oldest wine families in the Vacqueyras and Gigondas area, Messieurs Vache and Archimbaud can date part of the Domaine buildings back to the 12th century. The Gigondas is a wine to drink now or to lay down, depending on how up front and bold you prefer your reds. Made mostly from Grenache and blended with Syrah and Mourvèdre, this is full and heavy but with ripe fruit and silky tannins.

Domaine Clos de Cazaux Monsieur and Madame Vache possess vineyards only in the Vacqueyras and Gigondas appellations, with good sun-exposure on the stony limestone hillsides of the Dentelles de Montmirail of the southern Rhône. The poor soil, coupled with the age of the vines (between 30 and 50 years), make for a very low yield of greater intensity. The ripe grapes are picked by hand, but not destemmed. After a traditional fermentation, the grapes are matured in stainless steel as M and Mme Vache dislike the taste of oak in their wine. This preserves the true flavours of the Grenache (80%) Syrah and Mourvèdre grapes, and the balance of acidity and fruit in their excellent Gigondas.
