Juvé Y Camps’ Cava is made very traditionally using only the original grapes of the region, Xarel-Lo, Macabeo and Parellada. Each of these brings something special to the overall blend – Xarel-Lo provides the depth and strength and usually accounts for 20% of the blend, Macabeo the fruit and acidity (45%) and Parellada the creamy texture (35%). The wine is matured for 24 months in barrel and is of such quality that it is drunk by the Spanish Royal Family!

Juvé y Camps Juve y Camps, situated in San Sadourni de Noya was founded in 1921. About half of their 400 hectare holding is under cultivation. The three main varieties planted are Xarel-lo, Macabeo (known as Viura in Rioja) and Parellada. As in Champagne, the belief is that each grape brings a characteristic to the wine: Xarel-lo brings the weight and strength, Macabeo provides fruit and acidity and Parellada supplies the flavours and creamy texture, unique to Cava. Cava is Spanish Sparkling Wine made by the Metodo Traditionel. The grapes are never blended together, only the wines, and at Juvé de Camps only the free-run juice is used. Much of the vinification is still done by hand and the wine has been stored for 24 months although the minimum for Cava is 9. Only the very best Cava graces the table of the Spanish Royal family!
