Lustau The sherry firm of Emilio Lustau was established in its current form in 1896 by Don José Ruiz-Berdejo y Veyan at Nuestra Señora de la Esperanza. The bodega was moved to the ancient Santiago district in 1940 by his son-in-law Don Emilio Lustau Ortega and the comany name changed to his in 1950, and at the same time was becoming recognized amongst the most prestigious of Sherry producers. The secret of fine sherry is to do with the quality of the grapes and the blending of wines of different ages taken from a butt, a serious of butts containing the same wine is called a solera. Juan Fuentes has been head sherry maker at Lustau for 20 years, coming from a long line of sherry-makers. Lustau continues to be highly regarded as a producer of fine and individual sherries throughout the world.
